1988 Ducati Paso attempted oil change, need help

Just acquired and am in the middle of an oil change, drained the oil from the center bottom allen bolt, but was not sure what the proper process is for loosing the hex side bolt with I believe is an attached filter screen. I see a slotted screw pointed in the direction of the hex bolt, does that need loosed first before trying to undo the hex bolt...what is the proper viscosity and a good brand of oil..Thanks Tracy... This is the 2nd try at posting this..

The screen comes out without looseninq the screw to the side. They can be REALLY tight so get ready with a breaker bar. I have used an impact gun to get a few out!
Without starting an oil jihad, I use Mobil! 10-40 motorcycle oils in all my Ducs. You will now get inundated with reccomendations.
Pick up new aluminum sealing rings. They are about a buck each at the dealer.
Prefill the oil filter before mounting it, put 3 qts in the crancase and start it up. Top it off with the remaining quart.
