Carb rebuild + throttle linkage

I'm in the process of cleaning/rebuilding the Weber. Never done it before.
1. Can I pop the throttle linkage ball like in this video or am I going to damage it?
Or should I remove the throttle cable from the throttle body another way?

2. Are there any other screws I need to note the position of besides the ones circled in this photo?
Don't want to start from scratch.

The carb must be quite gummed up - choke and throttle are hard to move
and already last year it wasn't idling without the choke on, even warmed up.
