not to experienced with 907 but my 750 paso with u.s.igntion (single pick up coil)did similar things
bought a 19 dollar pick up coil and magic problem gone. not saying its your problem but they can cause what is happening and sometimes only act up when warm.
mine just died when hot then wait 15 mins and would start right up i chased the problem for a long time.
there is a manufacturer part#( example marelli m9)on the actual sensor. ducati wanted $280 fiat car same part exactly $19

Perhaps a bit late but your problem might be the cam position sensor or the speed sensor failing due to age. After a while they heat up by the engine, and due to age they start failing. If one of these sensors (they are in the alternator cover) fails, the engine will stop dead because it does not know running speed or timing, hence no injection.
They are shimmed to a set distance from the signal knobs on the flywheel and intermediate cam wheel, with degrading performance they can become too weak to pick up the magnetic field.

A friend of mine worked on his Elefant 900ie last week (same injection system) after having swapped the engine (broken chain...), the engine had a self induced rev limiter due to the sensors being too far away from the knobs. Gave roughly the same symptoms.

when you restart it will it only rev to a certen rpm then cough & sputter if yes how long does it take /cool down before it acts normal

+ 1 on possible pick up coils issue thats what i was getting at. just went through it on my 750 paso with digiplex ign. check out 3200 rpm & stall thread on 750 section was very anoying and had to chase it for a long time to figure it out.good luck
